Maïs doux

Originaire d’Amérique, il appartient au genre Zea et à la famille des Gramineae.

Plante annuelle de 1,5-3 m, à racine fasciculée (séminale, adventive), à tige dressée, épaisse et solide, aux feuilles larges avec nerf central prononcé et alternes, aux fleurs mâles en panicule terminal et aux fleurs femelles en inflorescences axillaires. Le fruit est un caryopse, normalement jaune.

Leur demande sous forme de conserves ou de surgelés industriels a augmenté au cours des dernières années et les pays les plus gros producteurs sont les États-Unis et la Chine.
